It occurred to me that my cooking might be an inspiration for someone. So, I’ve decided to document my meals. Keeps me accountable. Keeps me cooking.

Sunday – Grilled Split Chicken, Spinach Salad, Grilled Vegetables

Monday – Whole-wheat Spaghetti with White Clam Sauce, Fresh Steamed Broccoli with Lemon Zest

Tuesday – Quick Red Beans and Brown Rice

Wednesday -Flat Iron Steak with Brown Sugar Rub, Fresh Sauteed Brussels Sprouts, Polenta with Parmesan

notes: Corn grits were from Crittenden, KY. One steak was only enough for dinner. No leftovers.

Thursday -Salmon Sliders (wild salmon, Rosemary Ciabatta Rolls, Spring Greens, Tartar Sauce), Mashed Potatoes (JOY), Green Peas

Friday – ate at a wedding

Saturday – Candy Land Birthday Cake, ate brats, hotdogs and hamburgers at a barbecue
